Developed by the U. of Minnesota. One of the best for grating and stuffing into eggrolls, strudels and veggie pies.

Sow parsnips once soil temp is about 77 degrees F. Seeds must stay moist and take anywhere from 16 to 25 days to germinate so this can be difficult. We have found the best way is to plant seeds shallow and water well and then cover with row cover or even a board for 5 or 6 days to help maintain moist soil and suppress those early weeds. After the first 7 days check ever couple of days to make sure soil does not dry out until seeds germinate.
